Description

This Amish Breakfast Casserole is loaded with hash browns, eggs, sausage, and cheese. A classic, make-ahead brunch recipe that’s perfect for holidays or feeding a crowd.


Ingredients

  • 1 pound sliced bacon, chopped
  • 1 medium onion, diced
  • 6 large eggs
  • 4 cups frozen shredded hash browns (thawed)
  • 11/2 cups small-curd cottage cheese
  • 2 cups shredded cheddar cheese
  • 11/2 cups shredded Swiss cheese
  • 1/2 pound bulk pork sausage
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook chopped bacon over medium heat until crispy.
  2. Remove and drain on paper towels.
  3. In the same skillet, brown the sausage and onions until meat is no longer pink. Drain fat.
  4. In a large bowl, beat eggs.
  5. Stir in hash browns, cottage cheese, cheddar cheese, and Swiss cheese.
  6. Add cooked sausage, bacon, and onions. Season with salt and pepper.
  7. Preheat oven to 350°F.
  8. Grease a 9×13 baking dish and pour in the mixture evenly.
  9. Bake uncovered for 35–40 minutes until golden and set.
  10. Let sit 5–10 minutes before serving.
