This Amish Breakfast Casserole is loaded with hash browns, eggs, sausage, and cheese. A classic, make-ahead brunch recipe that’s perfect for holidays or feeding a crowd.

- 1 pound sliced bacon, chopped
- 1 medium onion, diced
- 6 large eggs
- 4 cups frozen shredded hash browns (thawed)
- 1–1/2 cups small-curd cottage cheese
- 2 cups shredded cheddar cheese
- 1–1/2 cups shredded Swiss cheese
- 1/2 pound bulk pork sausage
- Salt and pepper to taste
Instructions
- In a large skillet, cook chopped bacon over medium heat until crispy.
- Remove and drain on paper towels.
- In the same skillet, brown the sausage and onions until meat is no longer pink. Drain fat.
- In a large bowl, beat eggs.
- Stir in hash browns, cottage cheese, cheddar cheese, and Swiss cheese.
- Add cooked sausage, bacon, and onions. Season with salt and pepper.
- Preheat oven to 350°F.
- Grease a 9×13 baking dish and pour in the mixture evenly.
- Bake uncovered for 35–40 minutes until golden and set.
- Let sit 5–10 minutes before serving.
