Instructions
- Toast the bread: Use a toaster or oven until golden and crisp.
- Mash the avocado: In a small bowl, mash the avocado with sea salt.
- Poach the eggs
- Bring water to a light simmer in a saucepan.
- Add vinegar.
- Crack eggs into a ramekin and gently drop into water.
- Cook for 3–4 minutes until whites are set.
- Assemble
- Spread avocado on toast.
- Top with poached egg.
