- 1 ½ pounds boneless, skinless chicken breasts (cut into 1-inch chunks)
- 1 cup buttermilk
- 1 large egg
- 1 cup all-purpose flour
- ½ cup cornstarch
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt & pepper to taste
- Vegetable oil (for frying)
For the Sauce:
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1 tbsp Sriracha (adjust to taste)
- 1 tbsp honey (optional for sweetness)
- 1 tsp rice vinegar
Instructions
- Cut chicken into uniform bite-sized chunks
- Marinate in buttermilk + egg mixture for at least 30 mins
- Mix flour, cornstarch, garlic powder, paprika, salt, and pepper
- Dredge marinated chicken in flour mix
- Fry at 350°F for 3–5 minutes until golden and crispy
- Whisk together mayo, chili sauce, sriracha, vinegar, and honey
- Adjust spice level to preference
- Toss chicken bites in sauce OR drizzle sauce over top just before serving
