This ultimate summer California Roll Salad is light, refreshing, and packed with bold sushi-inspired flavors like crab, avocado, and creamy dressing.
Ingredients

- 1 1/2 cups cooked sushi rice
- 1/2 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 cup cucumber, julienned
- 1/2 avocado, sliced
- 1/2 cup imitation crab meat (or real crab for upgrade)
- 1 tablespoon mayonnaise
- 1 teaspoon soy sauce
- 1 teaspoon sesame oil
- 1 sheet nori, sliced
- Optional: sriracha, pickled ginger, wasabi
Instructions
- Cook rice and mix in vinegar, sugar, and salt
- Let cool to room temperature
- Slice cucumber, avocado, crab, and nori
- Mix soy sauce, mayo, and sesame oil for dressing
- Layer sushi rice, then veggies and crab
- Drizzle dressing, top with sesame seeds and extra nori
- Optional: drizzle spicy mayo and garnish with pickled ginger
