- 1 cup milk
- 2 tablespoons instant espresso powder
- 1/2 cup unsalted butter, melted
- 1 egg
- 1 cup mini chocolate chips
- Optional glaze: powdered sugar + brewed espresso
Instructions
- Preheat oven to 375°F and line muffin tin with paper liners.
- In a small bowl, dissolve espresso powder in milk.
- In a large bowl, combine flour, sugar, baking powder, cinnamon, and salt.
- Add milk mixture, melted butter, and egg to dry ingredients.
- Stir gently until just combined.
- Fold in mini chocolate chips.
- Spoon batter into muffin cups, filling 2/3 full.
- Bake for 15–20 minutes or until a toothpick comes out clean.
- Cool on a wire rack before glazing, if desired.
