- 2 ciabatta rolls, halved
- 2 tablespoons pesto (homemade or jarred)
- 6 oz grilled chicken breast, sliced thin
- 4 slices mozzarella cheese (or provolone)
- ½ cup baby spinach or arugula
- 2 tablespoons olive oil or butter for grilling
- Optional: roasted red peppers, sliced tomatoes
Instructions
Step 1: Prep the Ingredients
- Slice grilled chicken thinly.
- Cut and lightly toast the bread for texture.
Step 2: Spread the Pesto
- Apply pesto on the inside of both halves of the bread using a brush or back of a spoon.
Step 3: Build the Sandwich
- Layer cheese first, then chicken, spinach, and any extras.
- Close the sandwich with the top bread slice.
Step 4: Grill It to Perfection
- Heat panini press or skillet to medium.
- Brush bread with olive oil or butter.
- Grill for 3–4 minutes until crispy and golden.
