Description

This coconut rice with lime zest is creamy, fragrant, and easy to make—perfect with grilled meats, tropical meals, and Asian-inspired dishes.


Ingredients

Scale
  • 1 cup jasmine rice
  • 1 cup coconut milk (unsweetened)
  • ¾ cup water
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest (freshly grated)
  • ½ teaspoon salt
  • Optional: 1 tablespoon chopped fresh cilantro

Instructions

  1. Prep the Rice
  2. Rinse 1 cup of rice under cold water until clear.
  3. Drain thoroughly to avoid excess water content.
  4. Combine in Pot
  5. In a medium saucepan, combine coconut milk, water, salt, lime juice, and rice.
  6. Stir well to avoid coconut milk separation.
  7. Simmer Low & Slow
  8. Bring to a gentle boil over medium heat.
  9. Reduce to low, cover, and let simmer for 18–20 minutes.
  10. Fluff and Zest
  11. Once liquid is absorbed, remove from heat and let sit covered for 5 minutes.
  12. Fluff rice with a fork and fold in the lime zest.
  13. Garnish and Serve
  14. Top with chopped cilantro or green onions.
  15. Serve warm as a tropical side dish.
