This coconut rice with lime zest is creamy, fragrant, and easy to make—perfect with grilled meats, tropical meals, and Asian-inspired dishes.

- 1 cup jasmine rice
- 1 cup coconut milk (unsweetened)
- ¾ cup water
- 1 tablespoon lime juice
- 1 teaspoon lime zest (freshly grated)
- ½ teaspoon salt
- Optional: 1 tablespoon chopped fresh cilantro
Instructions
- Prep the Rice
- Rinse 1 cup of rice under cold water until clear.
- Drain thoroughly to avoid excess water content.
- Combine in Pot
- In a medium saucepan, combine coconut milk, water, salt, lime juice, and rice.
- Stir well to avoid coconut milk separation.
- Simmer Low & Slow
- Bring to a gentle boil over medium heat.
- Reduce to low, cover, and let simmer for 18–20 minutes.
- Fluff and Zest
- Once liquid is absorbed, remove from heat and let sit covered for 5 minutes.
- Fluff rice with a fork and fold in the lime zest.
- Garnish and Serve
- Top with chopped cilantro or green onions.
- Serve warm as a tropical side dish.
