Description

Crème brûlée donuts are filled with silky vanilla custard and topped with a caramelized sugar crust. A French-inspired gourmet donut made at home!


Ingredients

Scale
  • 2 ¼ tsp active dry yeast
  • ¾ cup warm whole milk
  • ¼ cup granulated sugar
  • 2 large eggs
  • 3 cups all-purpose flour
  • ½ tsp salt
  • ¼ cup unsalted butter, softened
  • Oil for frying (canola or vegetable)

For the Custard Filling:

  • 2 cups whole milk
  • 5 egg yolks
  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • 1 tbsp unsalted butter
  • 2 tsp vanilla extract

For the Caramelized Topping:

  • Extra granulated sugar for brûlée (about ½ cup)

Instructions

  1. Bloom yeast in warm milk and sugar.
  2. Mix eggs, flour, salt, and butter to form dough.
  3. Let rise in warm place for 1-2 hours.
  4. Roll out dough and cut circles.
  5. Let rest, then fry until golden brown.
  6. Drain on paper towels.
  7. Whisk yolks, sugar, and cornstarch.
  8. Heat milk and temper yolks.
  9. Thicken on stove, then add butter & vanilla.
  10. Chill until thick.
  11. Use piping bag to fill donuts with custard.
  12. Dip tops in sugar, torch to crisp.
