Description

These crispy rice lettuce cups with peanut sauce are crunchy, fresh, and packed with flavor—perfect as a light lunch, appetizer, or healthy snack.


Ingredients

For the Crispy Rice:

  • 2 cups cooked jasmine or short-grain rice (chilled)
  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • ½ teaspoon salt

For the Peanut Sauce:

  • ¼ cup creamy peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon rice vinegar
  • 1 clove garlic, minced
  • 12 tablespoons warm water (to thin)

Instructions

  1. Heat sesame oil in a non-stick skillet over medium heat.
  2. Press rice into the pan and cook until golden brown (4–6 minutes each side).
  3. Flip or break into pieces and crisp the other side. Set aside.
  4. Make the Peanut Sauce
  5. In a small bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, rice vinegar, and garlic.
  6. Add warm water until smooth and pourable.
  7. Adjust taste with more lime or sweetener if desired.
  8. Assemble the Lettuce Cups
  9. Lay out lettuce leaves on a platter.
  10. Add crispy rice chunks to each leaf.
  11. Top with cucumber, carrot, herbs, and chopped peanuts.
  12. Drizzle or serve with peanut sauce on the side.
