These crispy rice lettuce cups with peanut sauce are crunchy, fresh, and packed with flavor—perfect as a light lunch, appetizer, or healthy snack.

For the Crispy Rice:
- 2 cups cooked jasmine or short-grain rice (chilled)
- 2 tablespoons sesame oil
- 1 tablespoon soy sauce
- ½ teaspoon salt
For the Peanut Sauce:
- ¼ cup creamy peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 tablespoon maple syrup or honey
- 1 teaspoon rice vinegar
- 1 clove garlic, minced
- 1–2 tablespoons warm water (to thin)
Instructions
- Heat sesame oil in a non-stick skillet over medium heat.
- Press rice into the pan and cook until golden brown (4–6 minutes each side).
- Flip or break into pieces and crisp the other side. Set aside.
- Make the Peanut Sauce
- In a small bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, rice vinegar, and garlic.
- Add warm water until smooth and pourable.
- Adjust taste with more lime or sweetener if desired.
- Assemble the Lettuce Cups
- Lay out lettuce leaves on a platter.
- Add crispy rice chunks to each leaf.
- Top with cucumber, carrot, herbs, and chopped peanuts.
- Drizzle or serve with peanut sauce on the side.
