These crispy smashed potatoes with herb butter are golden, garlicky, and addictively crunchy—perfect as a holiday or everyday side dish.


Ingredients

  • 2 lbs baby potatoes (Yukon Gold or red)
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 3 cloves fresh garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt & freshly ground black pepper to taste
  • Optional: grated parmesan, lemon zest

Instructions

  1. Boil potatoes until fork-tender (15–20 mins)
  2. Place on baking tray, gently smash each with a glass
  3. Drizzle olive oil and season
  4. Bake at 425°F for 20–25 minutes
  5. Brush with melted herb butter at the end and broil for 2–3 mins for extra crisp
