- 2 lbs baby potatoes (Yukon Gold or red)
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 3 cloves fresh garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh parsley, chopped
- Salt & freshly ground black pepper to taste
- Optional: grated parmesan, lemon zest
Instructions
- Boil potatoes until fork-tender (15–20 mins)
- Place on baking tray, gently smash each with a glass
- Drizzle olive oil and season
- Bake at 425°F for 20–25 minutes
- Brush with melted herb butter at the end and broil for 2–3 mins for extra crisp
