This cucumber hummus wrap is healthy, vegetarian, quick to make, and packed with crunch! The perfect plant-based lunch in just 10 minutes.


Ingredients

Scale
  • 2 large whole wheat tortillas (10-inch)
  • ½ cup classic or roasted garlic hummus
  • 1 cup baby spinach
  • ½ medium cucumber, thinly sliced
  • ½ cup shredded carrots
  • ¼ cup red bell pepper, thinly sliced
  • 1 tbsp feta cheese (optional)
  • 1 tbsp balsamic glaze or vinaigrette (optional)
  • Salt & pepper to taste

Instructions

  1. Wash and thinly slice cucumber, peppers, and carrots.
  2. Pat dry with a paper towel to prevent sogginess.
  3. Spread the Hummus
  4. Lay tortilla flat and spread a generous layer of hummus, leaving ½ inch at the edges.
  5. Top with spinach, cucumber, peppers, and carrots.
  6. Roll tightly like a burrito. Slice in half at an angle for presentation.
  7. Add feta crumbles or a drizzle of balsamic glaze for a tangy punch.
