- 2 large whole wheat tortillas (10-inch)
- ½ cup classic or roasted garlic hummus
- 1 cup baby spinach
- ½ medium cucumber, thinly sliced
- ½ cup shredded carrots
- ¼ cup red bell pepper, thinly sliced
- 1 tbsp feta cheese (optional)
- 1 tbsp balsamic glaze or vinaigrette (optional)
- Salt & pepper to taste
Instructions
- Wash and thinly slice cucumber, peppers, and carrots.
- Pat dry with a paper towel to prevent sogginess.
- Spread the Hummus
- Lay tortilla flat and spread a generous layer of hummus, leaving ½ inch at the edges.
- Top with spinach, cucumber, peppers, and carrots.
- Roll tightly like a burrito. Slice in half at an angle for presentation.
- Add feta crumbles or a drizzle of balsamic glaze for a tangy punch.
