Ingredients

- 1 ½ cups dried chickpeas (soaked overnight)p
- ½ medium onion, chopped
- 3 garlic cloves
- ½ cup fresh parsley
- ½ cup fresh cilantro
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp salt
- ½ tsp baking soda
- 2–3 tbsp flour (if needed)
- Neutral oil (vegetable or canola)
- Fresh pita or flatbread
- Chopped tomatoes & cucumbers
- Pickled turnips or red onions
- Fresh lettuce or greens
- Tahini sauce or garlic yogurt sauce
Instructions
- Drain and dry soaked chickpeas
- Pulse chickpeas, herbs, garlic, and onion in processor
- Add spices and baking soda
- Refrigerate for 30–60 minutes
- Form into small patties or balls
- Heat oil to 350°F
- Fry for 2–3 minutes per side until golden brown
- Warm pita or flatbread
- Add falafel, crunchy veggies, fresh herbs
- Drizzle tahini or garlic sauce generously
- Wrap it tight and serve
