- 2 tablespoons olive oil
- 1 leek, white and light green parts only, sliced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- ½ teaspoon ground coriander
- ½ teaspoon red pepper flakes (optional)
- 5 cups fresh spinach, chopped
- 1 cup chopped Swiss chard or kale
- ½ cup chopped fresh parsley
- ½ cup chopped fresh cilantro
- Salt and pepper to taste
- 4 large eggs
Optional Add-ins
- Feta cheese crumbles
- Avocado slices
- Fresh dill for garnish
Instructions
- Sauté the aromatics
- Heat olive oil in a skillet over medium heat. Add leeks and garlic, cook until soft and fragrant.
- Add spices and greens
- Stir in cumin, coriander, red pepper flakes. Add spinach, chard, parsley, and cilantro. Cook until wilted.
- Season and make wells
- Season with salt and pepper. Make 4 small wells in the greens.
- Cook the eggs
- Crack eggs into wells. Cover and cook 6–8 minutes until whites are set but yolks are runny.
- Serve hot
- Top with feta, avocado, or fresh herbs if desired. Serve directly in the pan.
