Ingredients

  • 1 onion, chopped
  • 4 garlic cloves, finely chopped
  • 2 tablespoons fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 4 cups chicken stock
  • 1-pound boneless, skinless chicken thighs
  • 1 large carrot, sliced thin
  • 4 ounces wide egg noodles
  • 1 tablespoon soy sauce
  • Salt and pepper to taste
  • 2 scallions, sliced thin
  • Optional: squeeze of lemon, red pepper flakes

Instructions

Sauté the Aromatics

  • Heat olive oil over medium heat in a large pot.
  • Add chopped onion, garlic, and ginger. Cook until fragrant.

Simmer the Broth
