- 4 cups chicken stock
- 1-pound boneless, skinless chicken thighs
- 1 large carrot, sliced thin
- 4 ounces wide egg noodles
- 1 tablespoon soy sauce
- Salt and pepper to taste
- 2 scallions, sliced thin
- Optional: squeeze of lemon, red pepper flakes
Instructions
Sauté the Aromatics
- Heat olive oil over medium heat in a large pot.
- Add chopped onion, garlic, and ginger. Cook until fragrant.
- Stir in turmeric and cook 1 minute longer.
Simmer the Broth
- Pour in chicken stock.
- Add chicken thighs and carrot slices.
- Bring to a boil, then reduce heat and simmer until chicken is tender.
Add Noodles and Seasonings
- Remove cooked chicken, shred it, and return to pot.
- Stir in egg noodles and soy sauce.
