- 1 ½ lbs boneless skinless chicken thighs
- ¼ cup olive oil
- 2 tbsp lemon juice
- 2 tbsp red wine vinegar
- 3 cloves garlic, minced
- 1 tbsp dried oregano
- 1 tsp garlic powder
- Salt & pepper to taste
- 2 cups cooked white rice or couscous
- 1 cup cherry tomatoes, halved
- ½ cucumber, diced
- ½ red onion, thinly sliced
- ½ cup kalamata olives
- ½ cup crumbled feta
- 1 cup chopped romaine lettuce
- Lemon wedges & pita slices (optional)
Instructions
- In a bowl, combine olive oil, vinegar, lemon juice, garlic, oregano, garlic powder, salt, and pepper.
- Add chicken and marinate in the fridge for at least 1 hour (ideally 4).
- Preheat grill to medium-high.
- Grill chicken 6–7 minutes per side until internal temp hits 165°F.
- Let rest, then slice thin.
- Start with a base of rice or lettuce.
- Add sliced chicken, chopped vegetables, olives, and feta.
- Top with tzatziki and lemon wedges.
