Description

Juicy grilled chicken, fresh veggies, creamy tzatziki—this Greek chicken gyro bowl is packed with flavor and perfect for healthy meal prep.


Ingredients

  • 1 ½ lbs boneless skinless chicken thighs
  • ¼ cup olive oil
  • 2 tbsp lemon juice
  • 2 tbsp red wine vinegar
  • 3 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 2 cups cooked white rice or couscous
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives
  • ½ cup crumbled feta
  • 1 cup chopped romaine lettuce
  • Lemon wedges & pita slices (optional)

Instructions

  1. In a bowl, combine olive oil, vinegar, lemon juice, garlic, oregano, garlic powder, salt, and pepper.
  2. Add chicken and marinate in the fridge for at least 1 hour (ideally 4).
  3. Preheat grill to medium-high.
  4. Grill chicken 6–7 minutes per side until internal temp hits 165°F.
  5. Let rest, then slice thin.
  6. Start with a base of rice or lettuce.
  7. Add sliced chicken, chopped vegetables, olives, and feta.
  8. Top with tzatziki and lemon wedges.
