Ingredients

  • 2 lbs whole carrots, peeled and trimmed
  • 3 tablespoons unsalted butter
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Optional garnish: chopped parsley or thyme

Instructions

  1. Prep the Carrots
  2. Wash, peel, and trim the ends.
  3. Cut larger carrots in half lengthwise.
  4. Make the Honey Butter Glaze
  5. Melt butter over medium-low heat.
  6. Stir in honey and olive oil until smooth.
  7. Toss and Coat
