Ingredients

Scale
  • 1 medium head green cabbage, cut into 8 wedges
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon sea salt
  • ½ teaspoon freshly cracked black pepper

Instructions

  1. Prep the Cabbage
  2. Remove outer leaves and core.
  3. Cut cabbage into even 2-inch wedges (see FAQ below).
  4. Place on a parchment-lined baking sheet.
  5. Mix the Honey-Mustard Glaze
  6. Whisk together honey, mustard, vinegar, oil, salt, and pepper.
  7. Adjust to taste: add more honey for sweetness or vinegar for tang.
  8. Brush and Roast
  9. Generously brush each wedge with the glaze.
  10. Roast at 400°F for 25-30 minutes, flipping halfway through.
  11. Wedges should be caramelized and tender with crisp edges.
