Description

This hearty Lasagna Soup is packed with savory beef, noodles, and creamy cheese — all in one pot! A cozy, easy weeknight dinner that freezes beautifully too.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp crushed red pepper flakes (optional)
  • 2½ Tbsp tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 4 cups chicken broth
  • 1½ cups mafalda or broken lasagna noodles
  • Salt and pepper to taste
  • Ricotta cheese
  • Shredded mozzarella
  • Fresh grated parmesan

Instructions

  1. Brown ground beef in a large pot over medium-high heat until fully cooked. Drain fat.
  2. Add diced onion and cook until soft (about 4 minutes). Stir in garlic and tomato paste.
  3. Add crushed tomatoes, herbs, and broth. Bring to a boil.
  4. Add pasta and simmer until tender (10–12 minutes).
  5. Serve hot with ricotta, mozzarella, and parmesan on top.
