This hearty Lasagna Soup is packed with savory beef, noodles, and creamy cheese — all in one pot! A cozy, easy weeknight dinner that freezes beautifully too.

- 1 lb ground beef
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp crushed red pepper flakes (optional)
- 2½ Tbsp tomato paste
- 1 (28 oz) can crushed tomatoes
- 4 cups chicken broth
- 1½ cups mafalda or broken lasagna noodles
- Salt and pepper to taste
- Ricotta cheese
- Shredded mozzarella
- Fresh grated parmesan
Instructions
- Brown ground beef in a large pot over medium-high heat until fully cooked. Drain fat.
- Add diced onion and cook until soft (about 4 minutes). Stir in garlic and tomato paste.
- Add crushed tomatoes, herbs, and broth. Bring to a boil.
- Add pasta and simmer until tender (10–12 minutes).
- Serve hot with ricotta, mozzarella, and parmesan on top.
