- 2 large boneless skinless chicken breasts, halved horizontally
- Salt and black pepper
- 1 cup all-purpose flour
- 3 large eggs
- 2 Tbsp lemon juice
- 1 tsp lemon zest
- 1 ½ cups finely grated Pecorino Romano cheese
- 1 ½ cups panko bread crumbs
- ½ tsp garlic powder
- ½ tsp onion powder
- Olive oil, for frying
- Optional: chopped fresh parsley and lemon wedges for garnish
Instructions
- Pound the chicken cutlets to even thickness
- Bread with flour → egg/lemon mixture → Romano/panko coating
- Pan-fry until golden brown and internal temp hits 165°F
- Drain on paper towels, garnish, and serve hot
