For the Salmon Tray Bake:
- 4 salmon fillets (skin-on or off, about 6 oz each)
- 1 lb baby potatoes, halved
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 red onion, cut into wedges
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Lemon Garlic Marinade:
- 4 garlic cloves, minced
- 3 tablespoons lemon juice (about 1 lemon)
- 1 tablespoon lemon zest
- 2 tablespoons olive oil
- 1 teaspoon Dijon mustard
- ½ teaspoon paprika
- Optional: 1 tablespoon honey (for a subtle sweetness)
- Fresh parsley for garnish
Instructions
- Prep the Oven & Tray
- Preheat oven to 400°F.
- Line a large baking tray with parchment paper.
- Spread baby potatoes on the tray. Drizzle with 1 tablespoon olive oil and a pinch of salt and pepper. Roast for 10 minutes.
- Make the Marinade
- In a bowl, whisk together garlic, lemon juice, zest, mustard, paprika, olive oil, and honey if using.
- Flavor the Salmon
- Pat salmon fillets dry.
- Spoon marinade over the salmon and let sit for 10–15 minutes while potatoes roast.
- Assemble the Tray Bake
- Remove tray from oven.
- Add broccoli, bell pepper, and onion to tray. Toss lightly in remaining olive oil.
- Nestle salmon fillets in the center of the tray. Spoon remaining marinade over vegetables.
- Bake Everything Together
- Return tray to oven. Bake for 15 minutes, or until salmon flakes easily with a fork.
- Broil for the final 2 minutes for golden edges (optional).
- Garnish & Serve
- Sprinkle fresh parsley on top before serving.
- Serve directly from tray for rustic appeal.
