For the Salmon Tray Bake:

  • 4 salmon fillets (skin-on or off, about 6 oz each)
  • 1 lb baby potatoes, halved
  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 red onion, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For the Lemon Garlic Marinade:

  • 4 garlic cloves, minced
  • 3 tablespoons lemon juice (about 1 lemon)
  • 1 tablespoon lemon zest
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • ½ teaspoon paprika
  • Optional: 1 tablespoon honey (for a subtle sweetness)
  • Fresh parsley for garnish

Instructions

  1. Prep the Oven & Tray
  2. Preheat oven to 400°F.
  3. Line a large baking tray with parchment paper.
  4. Spread baby potatoes on the tray. Drizzle with 1 tablespoon olive oil and a pinch of salt and pepper. Roast for 10 minutes.
  5. Make the Marinade
  6. In a bowl, whisk together garlic, lemon juice, zest, mustard, paprika, olive oil, and honey if using.
  7. Flavor the Salmon
  8. Pat salmon fillets dry.
  9. Spoon marinade over the salmon and let sit for 10–15 minutes while potatoes roast.
  10. Assemble the Tray Bake
  11. Remove tray from oven.
  12. Add broccoli, bell pepper, and onion to tray. Toss lightly in remaining olive oil.
  13. Nestle salmon fillets in the center of the tray. Spoon remaining marinade over vegetables.
  14. Bake Everything Together
  15. Return tray to oven. Bake for 15 minutes, or until salmon flakes easily with a fork.
  16. Broil for the final 2 minutes for golden edges (optional).
  17. Garnish & Serve
