Slaw:
- 3 cups broccoli stems, shredded or julienned
- 1 cup carrots, shredded
- ½ cup red cabbage, finely sliced (optional for color)
- ¼ cup chopped fresh parsley
Dressing:
- ¼ cup tahini (stirred well)
- 3 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1 tablespoon maple syrup
- 1 teaspoon Dijon mustard
- 1 garlic clove, finely minced
- Salt and pepper, to taste
- 2 to 3 tablespoons cold water, to thin
Instructions
- In a bowl, whisk all dressing ingredients except water.
- Add water a tablespoon at a time to reach desired consistency.
- Toss the shredded veggies in a large bowl, pour over dressing, and mix.
