- 1 tablespoon taco seasoning
- ½ teaspoon garlic powder
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup frozen corn
- 1 cup salsa
- 1 cup shredded Mexican cheese blend
- ½ cup sliced pickled jalapeños
- ¼ cup diced red onion
- 2 tablespoons chopped fresh cilantro
- Optional: sour cream, avocado, lime wedges
Instructions
- Preheat oven to 425°F.
- In a large bowl, toss cauliflower with olive oil, taco seasoning, and garlic powder.
- Spread on a sheet pan and roast for 25 minutes or until golden brown.
- In a baking dish, layer roasted cauliflower, black beans, corn, salsa, cheese, and jalapeños.
- Repeat layers if dish is deep enough.
- Cover with foil and bake for 15 minutes, then uncover and bake another 10 until cheese is melted and bubbly.
- Remove from oven and top with onion, cilantro, avocado, and sour cream.
