Description

Cheesy, healthy, and loaded with flavor—this Nacho Cauliflower Casserole is a low-carb twist on comfort food you won’t be able to stop eating.


Ingredients

Scale
  • 1 tablespoon taco seasoning
  • ½ teaspoon garlic powder
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup salsa
  • 1 cup shredded Mexican cheese blend
  • ½ cup sliced pickled jalapeños
  • ¼ cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • Optional: sour cream, avocado, lime wedges

Instructions

  1. Preheat oven to 425°F.
  2. In a large bowl, toss cauliflower with olive oil, taco seasoning, and garlic powder.
  3. Spread on a sheet pan and roast for 25 minutes or until golden brown.
  4. In a baking dish, layer roasted cauliflower, black beans, corn, salsa, cheese, and jalapeños.
  5. Repeat layers if dish is deep enough.
  6. Cover with foil and bake for 15 minutes, then uncover and bake another 10 until cheese is melted and bubbly.
  7. Remove from oven and top with onion, cilantro, avocado, and sour cream.
