For the Custard:
- 5 large eggs
- 1 cup heavy cream
- ¾ cup whole milk
- ½ cup brown sugar
- 1 tablespoon maple syrup
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- Pinch of salt
Optional Add-Ins:
- ½ cup blueberries or raspberries
- Chopped nuts or mini chocolate chips
- Powdered sugar or whipped cream for topping
Instructions
- Preheat griddle or skillet to medium heat.
- Mix pancake mix, milk, eggs, butter, and vanilla until smooth.
- Pour ¼ cup batter per pancake and cook until golden. Cool on wire rack.
- For the Custard, Whisk eggs, cream, milk, sugar, cinnamon, maple syrup, salt, and vanilla together until well combined.
- Assemble Casserole
- Lightly grease 9×13 dish.
- Layer pancakes in overlapping rows.
- Pour custard mixture evenly over pancakes. Gently press down.
- Let casserole sit for 30 minutes or cover and refrigerate overnight.
- Bake at 350°F for 35–40 minutes or until set and golden brown.
- Let cool slightly.
- Dust with powdered sugar or top with syrup.
- Serve warm for a cozy breakfast or brunch.
