Ingredients

  • 1 ½ cups whole milk
  • 2 large eggs

For the Custard:

  • 5 large eggs
  • 1 cup heavy cream
  • ¾ cup whole milk
  • ½ cup brown sugar
  • 1 tablespoon maple syrup
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt

Optional Add-Ins:

  • ½ cup blueberries or raspberries
  • Chopped nuts or mini chocolate chips
  • Powdered sugar or whipped cream for topping

Instructions

  1. Preheat griddle or skillet to medium heat.
  2. Mix pancake mix, milk, eggs, butter, and vanilla until smooth.
  3. Pour ¼ cup batter per pancake and cook until golden. Cool on wire rack.
  4. For the Custard, Whisk eggs, cream, milk, sugar, cinnamon, maple syrup, salt, and vanilla together until well combined.
  5. Assemble Casserole
  6. Lightly grease 9×13 dish.
  7. Layer pancakes in overlapping rows.
  8. Pour custard mixture evenly over pancakes. Gently press down.
