Description

Crispy on the outside, tender on the inside—these Parmesan-Crusted Zucchini Fries are the perfect healthy snack or side, baked or air fried to perfection.


Ingredients

Scale
  • 2 medium zucchini, ends trimmed and cut into sticks
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Cooking spray (olive oil-based recommended)

Instructions

  1. Slice zucchini into thin fry-shaped pieces.
  2. Pat dry thoroughly with paper towels to prevent sogginess.
  3. Beat eggs in one bowl.
  4. In another bowl, mix Parmesan, panko, garlic powder, salt, and pepper.
  5. Dip each zucchini stick into egg, then dredge in Parmesan mixture. Press to coat well.
  6. Arrange fries on a baking sheet lined with parchment paper.
  7. Lightly spray tops with olive oil spray.
  8. Bake at 425°F for 20–25 minutes, flipping halfway through.
