- 2 medium zucchini, ends trimmed and cut into sticks
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 1/2 cup panko breadcrumbs
- 1/4 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Cooking spray (olive oil-based recommended)
Instructions
- Slice zucchini into thin fry-shaped pieces.
- Pat dry thoroughly with paper towels to prevent sogginess.
- Beat eggs in one bowl.
- In another bowl, mix Parmesan, panko, garlic powder, salt, and pepper.
- Dip each zucchini stick into egg, then dredge in Parmesan mixture. Press to coat well.
- Arrange fries on a baking sheet lined with parchment paper.
- Lightly spray tops with olive oil spray.
- Bake at 425°F for 20–25 minutes, flipping halfway through.
