Description

This pasta salad with salmon and dill is creamy, fresh, and perfect for make-ahead lunches, picnics, or light dinners. Serve chilled and enjoy!


Ingredients

  • 12 oz rotini pasta
  • 2 cups cooked salmon, flaked
  • ½ cup mayonnaise or Greek yogurt
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh lemon juice
  • ¼ cup chopped fresh dill
  • ½ small red onion, finely chopped
  • 2 celery stalks, diced
  • 2 tablespoons capers (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil (for pasta if not serving immediately)

Instructions

  1. Boil pasta in salted water until al dente.
  2. Drain and rinse under cold water.
  3. Toss with olive oil to prevent sticking.
  4. In a large bowl, combine mayonnaise, Dijon mustard, lemon juice, and chopped dill.
  5. Add salt and pepper to taste.
  6. Mix in chopped celery, red onion, and capers.
  7. Gently fold in the flaked salmon.
  8. Combine the cooled pasta with the dressing and salmon mix.
  9. Chill for 1 hour before serving for optimal flavor.
  10. Top with extra dill or lemon wedges.
  11. Serve cold as a main or side dish.
