These Peanut Chicken Ramen Noodles combine creamy peanut butter, tender chicken, and bold Asian flavors into one quick, satisfying dinner.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, sliced
  • 2 tbsp olive oil or sesame oil
  • 2 packs of instant ramen noodles (discard seasoning packets)
  • 1 red bell pepper, thinly sliced
  • 1 carrot, shredded
  • 3 cups chicken broth
  • 1 cup canned coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1/2 tsp red pepper flakes (optional for spice)
  • Fresh lime wedges, for serving
  • Crushed peanuts & chopped cilantro for garnish

For the Creamy Peanut Sauce:

  • 1/2 cup smooth peanut butter
  • 1 tbsp honey or maple syrup
  • 1 tbsp fresh grated ginger
  • 2 cloves garlic, minced
  • 1 tbsp sriracha or chili sauce (adjust to taste)
  • 1/2 cup warm water (to thin)

Instructions

  1. Heat oil in a skillet, add sliced chicken
  2. Season with salt and pepper
  3. Sear until golden, about 5 minutes per side
  4. In a bowl, combine peanut butter, honey, ginger, garlic, soy sauce, vinegar, sriracha, and warm water
  5. Whisk until smooth and pourable
  6. Add coconut milk and broth to skillet
  7. Toss in bell peppers and carrots
  8. Stir in peanut sauce and bring to a simmer
  9. Break ramen bricks in half, add to skillet
  10. Simmer 4–5 minutes until noodles are soft and coated in sauce
  11. Top with chopped peanuts, green onions, fresh cilantro, and lime
  12. Optional: drizzle extra sriracha
  13. Use creamy peanut butter for best texture
  14. Don’t overcook noodles — keep them slightly firm
  15. Balance spice with a dash of lime juice
