These Peanut Chicken Ramen Noodles combine creamy peanut butter, tender chicken, and bold Asian flavors into one quick, satisfying dinner.
Ingredients

- 1 lb boneless, skinless chicken thighs or breasts, sliced
- 2 tbsp olive oil or sesame oil
- 2 packs of instant ramen noodles (discard seasoning packets)
- 1 red bell pepper, thinly sliced
- 1 carrot, shredded
- 3 cups chicken broth
- 1 cup canned coconut milk
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 tsp red pepper flakes (optional for spice)
- Fresh lime wedges, for serving
- Crushed peanuts & chopped cilantro for garnish
For the Creamy Peanut Sauce:
- 1/2 cup smooth peanut butter
- 1 tbsp honey or maple syrup
- 1 tbsp fresh grated ginger
- 2 cloves garlic, minced
- 1 tbsp sriracha or chili sauce (adjust to taste)
- 1/2 cup warm water (to thin)
Instructions
- Heat oil in a skillet, add sliced chicken
- Season with salt and pepper
- Sear until golden, about 5 minutes per side
- In a bowl, combine peanut butter, honey, ginger, garlic, soy sauce, vinegar, sriracha, and warm water
- Whisk until smooth and pourable
- Add coconut milk and broth to skillet
- Toss in bell peppers and carrots
- Stir in peanut sauce and bring to a simmer
- Break ramen bricks in half, add to skillet
- Simmer 4–5 minutes until noodles are soft and coated in sauce
- Top with chopped peanuts, green onions, fresh cilantro, and lime
- Optional: drizzle extra sriracha
- Use creamy peanut butter for best texture
- Don’t overcook noodles — keep them slightly firm
- Balance spice with a dash of lime juice
