Description

These Pineapple Upside Down Pancakes are fluffy, fruity, and caramelized with brown sugar! A tropical twist on brunch that looks stunning and tastes even better.


Ingredients

  • 1 can (20 oz) sliced pineapple rings, drained
  • ¼ cup light brown sugar
  • 2 tablespoons unsalted butter
  • 1 ½ cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ¼ cups buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Maraschino cherries, for garnish
  • Maple syrup and additional butter, for serving

Instructions

  1. Heat a skillet over medium heat
  2. Melt butter and stir in brown sugar
  3. Add pineapple rings and cook 1–2 minutes per side
  4. Set aside once caramelized
  5. Whisk dry ingredients together
  6. Mix wet ingredients separately
  7. Combine until just mixed (don’t overmix!)
  8. Grease skillet
  9. Pour ¼ cup of batter, place a pineapple ring in the center
  10. Add cherry to the middle (optional)
  11. Cook until bubbles form and edges dry
  12. Flip and cook other side 1–2 minutes
