These Pineapple Upside Down Pancakes are fluffy, fruity, and caramelized with brown sugar! A tropical twist on brunch that looks stunning and tastes even better.

- 1 can (20 oz) sliced pineapple rings, drained
- ¼ cup light brown sugar
- 2 tablespoons unsalted butter
- 1 ½ cups all-purpose flour
- 3 tablespoons granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ¼ cups buttermilk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Maraschino cherries, for garnish
- Maple syrup and additional butter, for serving
Instructions
- Heat a skillet over medium heat
- Melt butter and stir in brown sugar
- Add pineapple rings and cook 1–2 minutes per side
- Set aside once caramelized
- Whisk dry ingredients together
- Mix wet ingredients separately
- Combine until just mixed (don’t overmix!)
- Grease skillet
- Pour ¼ cup of batter, place a pineapple ring in the center
- Add cherry to the middle (optional)
- Cook until bubbles form and edges dry
- Flip and cook other side 1–2 minutes
