For the Salmon
- 1 lb fresh salmon fillet, skin removed
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon smoked paprika (optional)
For the Sandwich Assembly
- 4 brioche or sandwich buns
- 1 large tomato, sliced
- 1 cup baby arugula or lettuce
- 1/2 small red onion, thinly sliced
For the Sauce
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon fresh dill, chopped
- 1/2 teaspoon garlic powder
Instructions
- Preheat skillet or grill pan over medium-high heat.
- Rub salmon with olive oil, salt, pepper, and paprika.
- Cook 3–4 minutes per side until golden and flakey.
- In a small bowl, whisk together mayo, lemon juice, dill, and garlic powder.
- Chill until ready to serve.
- Lightly toast buns.
- Spread sauce on both sides.
- Layer greens, tomato, salmon, and onion.
- Press gently and serve.
