For the Sandwich Assembly

  • 4 brioche or sandwich buns
  • 1 large tomato, sliced
  • 1 cup baby arugula or lettuce
  • 1/2 small red onion, thinly sliced

For the Sauce

  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat skillet or grill pan over medium-high heat.
  2. Rub salmon with olive oil, salt, pepper, and paprika.
  3. Cook 3–4 minutes per side until golden and flakey.
  4. In a small bowl, whisk together mayo, lemon juice, dill, and garlic powder.
  5. Chill until ready to serve.
  6. Lightly toast buns.
