For the Crumb Topping:
- 1 ½ cups all-purpose flour
- ½ cup packed light brown sugar
- ¼ cup cold unsalted butter, cubed
For the Filling:
- ¾ cup molasses (light for mild, dark for rich flavor)
- ½ teaspoon baking soda
- ¾ cup hot water
- 1 large egg, beaten
Pie Crust:
- 1 (9-inch) unbaked pie shell
Instructions
Preheat and Prep
- Preheat oven to 400°F
- Place unbaked pie shell in 9-inch pie pan
Make the Crumb Mixture
- Mix flour and brown sugar
- Cut in butter until mixture resembles coarse crumbs
- Set aside ½ cup for topping
Prepare the Filling
- Dissolve baking soda in hot water
- Whisk in molasses and beaten egg
- Pour into prepared pie crust
Add the Crumbs
- Sprinkle reserved crumb mixture on top of the liquid
Bake and Cool
- Bake at 400°F for 10 minutes
- Reduce to 350°F and bake for 35–40 minutes more
- Cool completely before slicing
