  • ½ cup packed light brown sugar
  • ¼ cup cold unsalted butter, cubed

For the Filling:

  • ¾ cup molasses (light for mild, dark for rich flavor)
  • ½ teaspoon baking soda
  • ¾ cup hot water
  • 1 large egg, beaten

Pie Crust:

  • 1 (9-inch) unbaked pie shell

Instructions

Preheat and Prep

  1. Preheat oven to 400°F
  2. Place unbaked pie shell in 9-inch pie pan

Make the Crumb Mixture

  1. Mix flour and brown sugar
  2. Cut in butter until mixture resembles coarse crumbs
  3. Set aside ½ cup for topping

Prepare the Filling

  1. Dissolve baking soda in hot water
  2. Whisk in molasses and beaten egg
  3. Pour into prepared pie crust

Add the Crumbs

  1. Sprinkle reserved crumb mixture on top of the liquid

Bake and Cool

  1. Bake at 400°F for 10 minutes
  2. Reduce to 350°F and bake for 35–40 minutes more
