Description

This slow cooker beef and potato gratin is creamy, cheesy, and full of flavor. A no-fuss, layered comfort meal perfect for busy weeknights.


Ingredients

  • 1 ½ pounds ground beef (lean preferred)
  • 6 medium russet potatoes, peeled and thinly sliced
  • 1 medium yellow onion, thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 (10.5 oz) can cream of mushroom soup
  • ½ cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Nonstick cooking spray

Instructions

  1. In a skillet over medium-high heat, cook the ground beef until browned and no longer pink. Drain off any excess grease.
  2. In a medium bowl, whisk together the cream of mushroom soup, milk, garlic powder, salt, and black pepper until smooth.
  3. Grease the inside of your slow cooker with nonstick spray.
  4. Start with a layer of sliced potatoes at the bottom.
  5. Add a layer of cooked ground beef, then onions, then a handful of cheese.
  6. Spoon over a bit of the sauce mixture.
  7. Repeat layers (potatoes → beef → onions → cheese → sauce) until all ingredients are used, finishing with cheese on top.
  8. Cover and cook on LOW for 6 to 7 hours, or until potatoes are fork-tender and flavors have blended beautifully.
  9. Turn off heat and let it sit uncovered for about 10 minutes before serving.
  10. Garnish with fresh parsley or chopped green onions if desired.
