This spicy cucumber sesame slaw is crisp, tangy, and bold—an easy low-carb side perfect for BBQs, rice bowls, or healthy weekday meals.


Ingredients

  • 4 Persian cucumbers or 2 English cucumbers
  • 1 teaspoon kosher salt
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon maple syrup (or honey)
  • 1 teaspoon red chili flakes
  • 1 garlic clove, minced
  • 1 tablespoon toasted sesame seeds
  • 1 stalk green onion, thinly sliced

Instructions

  1. Thinly slice cucumbers and sprinkle with salt. Let sit 10 minutes to draw out moisture.
  2. Drain excess water and gently pat dry.
  3. In a small bowl, whisk vinegar, sesame oil, soy sauce, maple syrup, red chili flakes, and garlic.
  4. Pour dressing over cucumbers, toss to coat evenly.
  5. Garnish with sesame seeds and green onions before serving.
