- ½ cup granulated sugar
- 2 cups all-purpose flour
- ¼ tsp salt
- 1 cup fresh lemon juice (about 4–5 lemons)
- 1 tbsp lemon zest
- 1½ cups granulated sugar
- ½ cup all-purpose flour
- 1 cup finely blended strawberries (strained)
- 4 large eggs
Instructions
- Preheat oven to 350°F and line your pan with parchment.
- In a bowl, beat softened butter and sugar until creamy.
- Add flour and salt; mix until dough forms.
- Press dough into pan and bake for 15 minutes until slightly golden.
- While crust bakes, whisk together lemon juice, zest, sugar, flour, eggs, and strained strawberry puree until smooth.
- Pour over the warm crust immediately after baking.
- Return to oven and bake for 20 minutes until filling is set.
- Cool completely, then refrigerate for 2+ hours for clean cuts.
- Dust with powdered sugar and garnish if desired.
