Description

Hearty Stuffed Pepper Casserole with ground beef, rice, peppers & cheese. A quick one-pot meal for busy nights. Comfort food made easy!


Ingredients

  • 1 lb ground beef
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long grain white rice
  • 2 cups beef broth
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 1½ cups shredded cheddar cheese

Instructions

  1. Cook ground beef in a skillet until no longer pink; drain excess fat.
  2. Add onions, garlic, and bell peppers. Sauté until soft.
  3. Simmer the Mixture
  4. Stir in tomato sauce, diced tomatoes, beef broth, and rice.
  5. Season with Italian seasoning, salt, and pepper.
  6. Let simmer until rice is tender and mixture thickens.
  7. Bake Until Golden & Bubbly
  8. Transfer mixture into a greased 9×13 baking dish.
  9. Top with shredded cheddar cheese.
  10. Cover with foil and bake at 350°F for 20 minutes. Uncover and bake 10 more minutes.
