Description

This sweet potato breakfast hash is healthy, hearty, and endlessly customizable. Perfect for meal prep or a quick weekday skillet breakfast.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 medium sweet potatoes, peeled and diced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 4 large eggs
  • 2 cups chopped kale or spinach
  • Optional: cooked sausage, turkey bacon, or tofu

Instructions

  1. Sauté the Aromatics
  2. Heat olive oil in a large skillet over medium heat.
  3. Add onions and peppers; cook until soft and fragrant (about 5–6 minutes).
  4. Cook the Sweet Potatoes
  5. Add diced sweet potatoes to the skillet.
  6. Season with garlic powder, paprika, salt, and pepper.
  7. Stir and cover, cook for 10–12 minutes until tender.
  8. Add Protein & Greens
  9. Stir in chopped kale or spinach and cooked sausage (if using).
  10. Cook until greens are wilted.
  11. Create Egg Wells & Finish
  12. Make 4 small wells in the hash. Crack an egg into each.
  13. Cover and cook until eggs are set (about 5 minutes for runny yolks).
  14. Serve hot with hot sauce or avocado.
