- 3 tablespoons olive oil or butter (divided)

Instructions
- Grate sweet potatoes using a box grater or food processor.
- Place grated sweet potatoes in clean kitchen towel and squeeze out as much moisture as possible.
- Transfer to a large mixing bowl and salt, pepper, garlic powder and onion powder.
Cooking the Hash Browns
- Heat 1 1/2 tablespoons olive oil in a large over medium heat.
- Add sweet potatoes, pressing gently to form an even layer.
- Cook undisturbed for 5-7 minutes until golden brown and crispy.
Finishing Touches
- Flip carefully and cook an additional 4-5 minute on the other side.
- Repeat with remaining mixture, adding more oil as needed.
- Garnish with fresh herbs and serve hot.
