Ingredients

  • 2 large sweet potatoes, peeled
  • 3 tablespoons olive oil or butter (divided)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Fresh parsley or chives, for garnish (optional)

Instructions

  1. Grate sweet potatoes using a box grater or food processor.
  2. Place grated sweet potatoes in clean kitchen towel and squeeze out as much moisture as possible.
  3. Transfer to a large mixing bowl and salt, pepper, garlic powder and onion powder.

Cooking the Hash Browns

  1. Heat 1 1/2 tablespoons olive oil in a large over medium heat.
  2. Add sweet potatoes, pressing gently to form an even layer.
  3. Cook undisturbed for 5-7 minutes until golden brown and crispy.

Finishing Touches

  1. Flip carefully and cook an additional 4-5 minute on the other side.
  2. Repeat with remaining mixture, adding more oil as needed.
  3. Garnish with fresh herbs and serve hot.
