This zesty roasted beet and orange salad is a refreshing, antioxidant-rich side dish that combines sweet citrus, earthy beets, and a tangy vinaigrette.

- 4 medium beets (red or golden)
- 2 large navel oranges
- 2 cups arugula or mixed greens
- 1/4 cup goat cheese, crumbled
- 1/4 cup chopped walnuts (lightly toasted)
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 tsp honey
- Salt and freshly cracked pepper to taste
Instructions
- Preheat oven to 400°F
- Roast whole beets wrapped in foil for 45–60 min
- Cool, peel (after roasting), slice thinly
- Segment oranges, reserve juice
- Whisk dressing: olive oil, vinegar, honey, orange juice
- Toss greens with dressing, top with beets, oranges, goat cheese, and nuts
