Description

This zesty roasted beet and orange salad is a refreshing, antioxidant-rich side dish that combines sweet citrus, earthy beets, and a tangy vinaigrette.


Ingredients

Scale
  • 4 medium beets (red or golden)
  • 2 large navel oranges
  • 2 cups arugula or mixed greens
  • 1/4 cup goat cheese, crumbled
  • 1/4 cup chopped walnuts (lightly toasted)
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp honey
  • Salt and freshly cracked pepper to taste

Instructions

  1. Preheat oven to 400°F
  2. Roast whole beets wrapped in foil for 45–60 min
  3. Cool, peel (after roasting), slice thinly
  4. Segment oranges, reserve juice
  5. Whisk dressing: olive oil, vinegar, honey, orange juice
  6. Toss greens with dressing, top with beets, oranges, goat cheese, and nuts
