This Asparagus and Brown Rice Salad is light, zesty, and packed with whole grains and greens. Perfect for meal prep, potlucks, or healthy springtime sides.

- 1 cup cooked brown rice (preferably long grain)
- 1 bunch fresh asparagus, trimmed and chopped
- 1 packed cup baby spinach
- 2 green onions, finely sliced
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup slivered almonds, toasted
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and black pepper to taste
Instructions
- Cook brown rice in advance and let cool completely.
- Blanch asparagus in boiling water for 2 minutes, then transfer to ice water.
- In a large bowl, combine rice, asparagus, spinach, and green onions.
- Drizzle with olive oil and lemon juice, toss gently.
- Add feta and almonds before serving.
